  • 1 pound chicken sausage
  • 4 medium potatoes, diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 bunch kale, chopped (about 4 cups)
  • 1 cup heavy cream (or half-and-half)
  • Olive oil for sautéing
  • Salt to taste
  • Pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the chicken sausage and cook until browned, about 5-7 minutes.
  2. Add the diced onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for another minute.
  3. Add the diced potatoes and pour in the chicken broth. Bring to a boil; then reduce heat and simmer until the potatoes are tender, about 15 minutes.
  4. Incorporate the chopped kale and red pepper flakes (if using) into the pot; cook for another 5 minutes.
  5. Lower the heat and stir in the heavy cream. Season with salt and pepper to taste; warm through for an additional 2-3 minutes.
  6. Serve hot with crusty bread or as desired.
