  • 11/2 cups shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 2 teaspoons garlic powder
  • 2 zucchini squash (sliced thin)
  • 45 tomatoes (sliced)
  • 3/4 cup fine bread crumbs
  • 2 tablespoons butter (melted)
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×9 baking dish.
  2. In a mixing bowl, combine mozzarella, Parmesan, garlic powder, salt, pepper, basil, and oregano.
  3. Layer sliced zucchini in the baking dish, sprinkle with cheese mixture, then layer tomatoes and repeat until all vegetables are used.
  4. Mix melted butter with bread crumbs in another bowl and sprinkle evenly over the layered vegetables.
  5. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 20 minutes until golden brown.
  6. Allow to rest for 5 minutes before serving.
