  • 1 clove garlic (grated fine)
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • Fresh herbs (chives, parsley, basil, oregano)
  • Pinch of salt and pepper

Instructions

  1. Preheat your oven to 400°F and lightly coat a baking sheet with olive oil.
  2. Grate the zucchini into a clean towel and twist to remove excess moisture.
  3. Grate the garlic using a box grater until fine.
  4. In a medium bowl, mix the shredded zucchini, grated garlic, egg, breadcrumbs, Parmesan cheese, herbs, salt, and pepper until well combined.
  5. Shape about one tablespoon of the mixture into small balls and place them on the baking sheet.
  6. Bake for 15-18 minutes until golden brown. Serve warm with marinara sauce.
