Zucchini Fritters are a delightful and healthy way to enjoy fresh zucchini, perfect as appetizers, snacks, or side dishes. Ingredients

  • 2 cups shredded zucchini (squeezed)
  • 1 cup Panko bread crumbs
  • 2 eggs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup finely shredded Mozzarella cheese
  • 2 garlic cloves (minced)
  • Salt and fresh cracked black pepper
  • 3 tbsp canola oil (for cooking)

Instructions

  1. Grate zucchini using a box grater. Transfer it to a mesh bag or cheese cloth and squeeze out excess moisture.
  2. In a mixing bowl, combine the squeezed zucchini with Panko bread crumbs, eggs, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper. Mix until well blended.
  3. Preheat a large cooking pan over medium heat and add oil.
  4. Use an ice cream scoop to portion out the mixture into fritters and gently shape them using your hands.
  5. Cook the fritters for 4-6 minutes on each side until golden brown. Flip only once to prevent breaking apart.
