  • 2 Zucchini, grated
  • 1 Carrot, grated
  • 2 tablespoons Olive Oil
  • 1 Brown Onion, diced
  • 2 Turkey Slices, diced
  • 5 Eggs, lightly whisked
  • 1/4 cup Milk
  • 1 cup Self-Raising Flour
  • 1 1/4 cup Grated Cheddar Cheese
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 180C (350F) and line a baking dish with baking paper.
  2. Grate zucchini and carrot into a colander; sprinkle with salt and let sit for 10 minutes to draw out moisture.
  3. In a frying pan over medium heat, sauté onion and turkey in olive oil until golden brown; set aside to cool.
  4. Squeeze excess moisture from zucchini and carrot before combining them in a large mixing bowl with capsicum, cooked onion, turkey, flour, and cheese.
  5. Add whisked eggs, milk, remaining olive oil, salt, and pepper; mix until well combined.
  6. Pour mixture into the prepared baking tray; smooth the top and sprinkle with additional cheese. Bake for 35–40 minutes until firm to touch.
  7. Allow cooling slightly before cutting into squares for serving.
