  • 240g all-purpose flour (can use gluten-free)
  • 2 tablespoons caster sugar
  • 220g dairy-free butter (cold, cut into cubes)
  • 100g pumpkin puree
  • 50g maple syrup
  • 1 teaspoon pumpkin spice
  • Icing: icing sugar, dairy-free milk, additional pumpkin puree, and pumpkin spice

Instructions

  1. In a mixing bowl, combine flour, caster sugar, and pumpkin spice. Add cold dairy-free butter and blend until crumbly.
  2. Gradually add ice water until the dough comes together; wrap in plastic and chill for 30 minutes.
  3. Mix pumpkin puree, more pumpkin spice, maple syrup, and cornstarch in another bowl for the filling.
  4. Preheat oven to 350°F (175°C). Roll out half the chilled dough to about 1/8 inch thick.
  5. Cut rectangles; place filling on half of each rectangle, leaving edges clear. Top with another rectangle and seal edges.
  6. Bake on parchment-lined baking sheet for 20-25 minutes until golden brown.
  7. Prepare icing while cooling: mix icing sugar with dairy-free milk, maple syrup, pumpkin puree, and pumpkin spice until smooth; drizzle over cooled pop tarts.
