  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1/4 cup unsalted butter, melted
  • 3 1/2 to 4 cups all-purpose flour
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. Combine warm milk, yeast, and a pinch of sugar in a large bowl; let stand for 5-10 minutes until foamy.
  2. Whisk in remaining sugar, egg, vanilla extract, salt, and melted butter until combined.
  3. Gradually add flour while mixing until a soft dough forms; knead on a floured surface for 5-7 minutes until smooth.
  4. Place dough in a greased bowl; cover and let rise in a warm place for 1 to 1.5 hours or until doubled in size.
  5. Punch down the risen dough and roll out on a floured surface to about 1/4 inch thickness; cut into squares or rectangles.
  6. Heat vegetable oil in a deep fryer or pot to 350°F (175°C). Fry beignets in batches for about 1-2 minutes per side until golden brown.
  7. Remove beignets using a slotted spoon; drain on paper towels and dust generously with powdered sugar before serving.
