  • 3 lbs goat meat
  • 45 tbsp curry powder
  • ½ cup green seasoning
  • 2 tbsp adobo
  • 3 tbsp complete seasoning
  • 1/2 Scotch bonnet pepper
  • 1/4 cup onion
  • 1/4 cup sweet pepper
  • 2 medium potatoes (cubed)
  • Fresh thyme
  • Ginger
  • Garlic

Instructions

  1. Wash the goat meat in vinegar, lime, and water; rinse thoroughly.
  2. Season the meat with dry seasonings, garlic, and half of the Ram It Up; marinate overnight in the fridge.
  3. In a heavy-bottomed pot, sauté crushed garlic in water; add curry powder and pimento seeds.
  4. Brown the marinated goat meat until seared.
  5. Add water, chopped onions, sweet peppers, thyme stems, ginger, and Scotch bonnet pepper; cover and simmer for 2-3 hours.
  6. Add cubed potatoes during the last stages of cooking until tender.
  7. Finalize seasoning to taste before serving hot with your favorite sides.
