  • 1 large red bell pepper, finely diced
  • 3 large cloves of garlic, finely diced
  • 2.2 lbs ground beef
  • 2 heaped tbsp tomato puree (tomato paste)
  • 1 cup red apple vinegar
  • 2 cans chopped tomatoes (14oz each)
  • 2 cans kidney beans (14oz each), drained
  • Spices: paprika, cumin, chili powder, oregano, ground coriander, sugar, salt, black pepper

Instructions

  1. In a large deep pot over medium heat, sauté the onion, red bell pepper, and garlic in olive oil until softened.
  2. Add the ground beef and brown it completely; stir in tomato puree and deglaze with red apple vinegar.
  3. Incorporate chopped tomatoes and water from the cans; add kidney beans and spices.
  4. Bring to a simmer; cover and reduce heat to low for about 1 hour and 30 minutes.
  5. Uncover to thicken sauce as desired; adjust seasoning if necessary.
  6. Serve hot over rice with cheese, sour cream, fresh herbs, and lime wedges.
