  • 1 cup potato starch
  • oil (for frying)
  • 3/4 cup honey
  • 1/4 cup light soy sauce (reduced sodium)
  • 2 cloves garlic
  • 45 slices ginger (sliced thin, 23 mm)
  • 1/2 cup water
  • 1 tablespoon hoisin sauce
  • 1/2 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon shaoxing cooking apple vinegar
  • 5 teaspoons corn starch
  • 6 teaspoons water
  • 12 stalks green onion (chopped)
  • toasted sesame seeds

Instructions

  1. Cut the beef into thin strips against the grain and coat with potato starch.
  2. Heat oil in a deep fryer or heavy pot until hot.
  3. Fry the beef strips in batches until golden brown and crispy; drain on paper towels.
  4. In a separate pan, sauté onions, garlic, and ginger, then mix in honey, soy sauce, water, hoisin sauce, rice vinegar, sesame oil, and shaoxing cooking apple vinegar.
  5. Thicken the sauce with a corn starch-water mixture while stirring continuously.
  6. Combine the crispy beef with the thickened sauce until well coated.
  7. Serve immediately with garnishes like green onions and sesame seeds.
