  • 1 cup chopped dates
  • 1 cup homogenized milk
  • 1 teaspoon baking soda
  • 4 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • Sea salt flakes
  • ½ cup butter (for caramel)
  • 1 cup brown sugar
  • ½ cup 35% cream
  • Whipped cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Butter an 11 x 8-inch casserole dish.
  2. Soak chopped dates in baking soda and scalded milk for about 15 minutes.
  3. In one bowl, mix flour, baking powder, and salt. In another bowl, beat eggs and then combine with sugar, butter, and vanilla in a food processor.
  4. Gradually add dry ingredients to the wet mixture before folding in the soaked dates.
  5. Pour batter into the prepared dish and bake for approximately 30 minutes or until set.
  6. While baking, prepare the caramel sauce by melting butter with brown sugar and cream in a saucepan until thickened.
  7. Once baked, poke holes in the pudding surface and pour some of the caramel sauce over it for soaking.
