  • 2 tablespoons rice vinegar
  • 1 tablespoon sriracha
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon sesame oil
  • 1/4 cup chopped green onions
  • Sesame seeds
  • Cooked rice

Instructions

  1. Marinate chicken: In a bowl, combine chicken thighs with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Cover and refrigerate for at least 30 minutes.
  2. Prepare the sauce: Whisk together remaining soy sauce, honey, rice vinegar, sriracha, and water in a small bowl.
  3. Cook chicken: Heat olive oil in a skillet over medium-high heat; cook marinated chicken until browned on all sides (5-7 minutes). Remove from skillet.
  4. Stir-fry vegetables: In the same skillet, add olive oil and sauté onion, bell peppers, garlic, and ginger until tender-crisp (5-7 minutes).
  5. Combine: Return chicken to the skillet and pour in the prepared sauce. Simmer until thickened (3-5 minutes).
