  • 1 salmon fillet
  • 1012 baby potatoes
  • 23 large eggs
  • 1 ripe avocado
  • 1 tsp olive oil
  • 1 tbsp butter
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 garlic clove, minced
  • 1 tbsp fresh dill (or parsley), chopped
  • Salt & pepper to taste

Instructions

  1. Boil the baby potatoes in salted water for 12-15 minutes until fork-tender. Drain and toss with butter, minced garlic, dill (or parsley), salt, and pepper.
  2. For soft-boiled eggs, boil for 7 minutes for jammy yolks or 9 minutes for fully set yolks. Transfer to ice water before peeling.
  3. Season the salmon with smoked paprika, garlic powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat and sear the salmon for 4-5 minutes on each side until golden brown.
  4. Assemble your plate by arranging the garlic herb potatoes, topped with sliced soft-boiled eggs and seared salmon. Add avocado slices on the side.
