  • 1 onion (diced)
  • 1 bell pepper (diced)
  • 4 cloves garlic
  • 3 roma tomatoes (finely diced)
  • 1 teaspoon paprika
  • Pinch of saffron threads
  • 4 boneless, skinless chicken thighs (cut into pieces)
  • 2 cups Spanish rice
  • 5 cups chicken broth
  • 1/2 lb jumbo shrimp (peeled)
  • 1/2 lb mussels (cleaned)
  • 8 oz calamari rings
  • 1/2 cup frozen peas
  • 1/4 cup white apple vinegar
  • Salt and pepper to taste
  • Bay leaf

Instructions

  1. In a large skillet or paella pan, heat olive oil over medium heat. Sauté diced onion, bell pepper, and garlic until the onion is translucent.
  2. Stir in finely diced tomatoes, bay leaf, paprika, saffron, salt, and pepper; cook for 5 minutes. Add white apple vinegar and simmer for another 10 minutes.
  3. Mix in chicken pieces and rice; stir gently for about a minute.
  4. Pour chicken broth evenly around the pan without stirring. Bring to a boil then reduce heat to medium-low.
  5. Cook uncovered for about 15-18 minutes until most liquid is absorbed.
  6. Nestle shrimp, mussels, and calamari on top; sprinkle frozen peas and continue cooking for an additional 5 minutes without stirring.
  7. Remove from heat and let it rest covered for about 10 minutes before serving.
