  • 3 carrots, cut into chunks
  • 1 can chickpeas, drained and rinsed
  • 1 cup dried apricots
  • 3 cloves garlic, minced
  • 2 tbsp ras el hanout spice mix
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tbsp tomato paste
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a bowl, combine ras el hanout, cumin, cinnamon, salt, pepper, and olive oil to create a spice paste.
  2. Coat the lamb pieces in the paste; marinate for at least one hour or overnight.
