  • 4 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp chili powder (optional)
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup beef broth
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • 2 tbsp oil (for browning)
  • Fresh cilantro and lime for garnish (optional)

Instructions

  1. Heat oil in a large skillet over medium-high heat. Brown the cubed beef in batches until golden on all sides. Remove and set aside.
  2. In the same skillet, sauté onions until translucent, then add garlic and ginger; cook until fragrant.
  3. Transfer browned beef and sautéed mixture to a slow cooker. Add coconut milk, diced tomatoes, beef broth, and spices. Season with salt and pepper.
  4. Cook on low for 6-8 hours until the beef is fork-tender.
  5. Serve hot with warm garlic naan, garnished with fresh cilantro and lime if desired.
