  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef cubes until browned on all sides. Remove and set aside.
  3. In the same pot, sauté onion, garlic, carrots, and celery until softened.
  4. Return the beef to the pot and add diced tomatoes, beef broth, tomato paste, and herbs. Stir well.
  5. Cover and bake in the oven for about 3 hours until the beef is fork-tender.
