  • 3 tablespoons butter (divided)
  • 2 small zucchini (cut into thin, half moon slices)

  • 1 small yellow onion (finely diced)
  • 1 pound small button mushrooms (cleaned and patted dry)
  • 3 to 4 cloves garlic (minced)
  • 2 teaspoons fresh chopped herbs (or use 1 teaspoon dried herbs like thyme or oregano)
  • ¼ cup vegetable broth
  • Chopped fresh parsley
  • Grated parmesan

Instructions

  1. In a large skillet, heat olive oil and ½ tablespoon of butter over medium-high heat.
  2. Add sliced zucchini; season with salt and pepper. Sauté for 3 to 4 minutes until tender. Remove from skillet.
  3. Return the skillet to heat; melt remaining butter and add diced onions. Cook for 2 minutes until softened.
  4. Stir in mushrooms; sauté for 5 to 7 minutes until browned.
  5. Add minced garlic and fresh herbs; cook for an additional 20 seconds until fragrant.
  6. Return zucchini to skillet; mix well and heat through for about a minute.
  7. Pour in vegetable broth; let simmer for 2 minutes before adjusting seasoning.
  8. Serve garnished with chopped parsley or grated cheese.
