  • 2 medium zucchini (cubed)
  • 1 onion (cut into pieces)
  • 1 bell pepper (cut into pieces)
  • 4 fully cooked sausages (sliced)
  • 2 ½ tbsp olive or avocado oil
  • 1 tsp garlic (minced)
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt
  • Fresh basil (for garnish, optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  2. Add sausage slices and sauté until browned; remove from skillet.
  3. Lower the heat to medium and add remaining oil along with zucchini, onion, and bell pepper.
  4. Sprinkle with seasonings and stir-fry until veggies are tender.
  5. Return the sausage to the skillet with minced garlic; mix well and cover for a few minutes to meld flavors.
