  • 200 g fresh beef, thinly sliced
  • 1 white onion, sliced
  • Chinese cabbage (or any leafy green)
  • 1 tbsp garlic, minced
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 3 tbsp dark soy sauce
  • 2 tsp fresh ground black pepper
  • 1 tsp corn starch or potato starch + water (for slurry)
  • 1 tsp Chinese white rice vinegar
  • 3 tbsp water
  • Salt to taste
  • Sugar to taste

Instructions

  1. Marinate the thinly sliced beef in a mixture of garlic, sesame oil, soy sauce, and cornstarch slurry for 10 minutes.
  2. Cook udon noodles in boiling water for 1–2 minutes until slightly tender, then drain.
  3. Combine remaining marinade with dark soy sauce, black pepper, water, and potato starch to prepare the sauce.
  4. Stir-fry garlic and onion in a hot wok before adding marinated beef; cook until browned.
  5. Pour in the prepared sauce and let it thicken before tossing in cooked udon noodles and chopped Chinese cabbage.
