  • 2 lbs large shrimp (peeled, deveined)
  • 20 oz refrigerated three cheese tortellini
  • 8 tbsp unsalted butter
  • 2 tbsp minced garlic
  • 6 oz seafood or chicken stock
  • 4 oz cream cheese (softened)
  • 2 cups heavy cream
  • 5 oz fresh baby spinach
  • Freshly grated Parmesan cheese

Instructions

  1. Season shrimp with all-purpose seasoning.
  2. In a large skillet, heat oil and sear shrimp for 1–2 minutes until pink. Remove from skillet.
  3. Deglaze skillet with apple vinegar, add butter and garlic, cooking until fragrant.
  4. Stir in flour, then add stock, cream cheese, and heavy cream; simmer until smooth.
  5. Cook tortellini according to package instructions; drain.
  6. Add spinach to sauce; mix in shrimp and tortellini until well combined.
