  • ⅓ cup low sodium soy sauce
  • 2 tablespoons honey
  • 2 teaspoons sesame oil
  • 2 tablespoons minced fresh ginger
  • 4 cloves garlic (minced)
  • 2 teaspoons cornstarch
  • ⅛ teaspoon crushed red pepper flakes (or to taste)
  • 2 ½ tablespoons olive oil (or avocado oil, divided)
  • 1 ½ pounds large shrimp (peeled and deveined, tail on or off)
  • 2 carrots (julienne cut)
  • 1 red bell pepper (thinly sliced)
  • 8 ounces sugar snap peas
  • 4 green onions (white and light green parts only, chopped)
  • 4 cups cooked rice
  • sesame seeds (optional)

Instructions

  1. In a small bowl, whisk together water (or chicken broth), low sodium soy sauce, honey, sesame oil, minced ginger, minced garlic, cornstarch, and crushed red pepper flakes to create the stir fry sauce.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook for about 2 minutes per side until pink. Remove shrimp from skillet and set aside.
  3. In the same skillet, add 1½ tablespoons of olive oil along with julienned carrots, sliced red bell pepper, and sugar snap peas. Sauté for 2–3 minutes until vegetables are crisp-tender.
  4. Return cooked shrimp to the skillet and pour in the stir fry sauce. Cook while stirring for 1 minute until the sauce thickens.
  5. Stir in chopped green onions before serving over cooked rice.
