  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 tablespoons vegetable oil (or any cooking oil of your choice)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving
  • Sesame seeds and green onions for garnish (optional)

Instructions

  1. Rinse shrimp under cold water; pat dry and season with salt and pepper.
  2. Prepare vegetables: wash asparagus, slice bell pepper, rinse snap peas; mince garlic and ginger.
  3. In a small bowl, whisk together soy sauce, oyster sauce (if using), cornstarch, and water until smooth.
  4. Heat oil in a large skillet over medium-high heat; add garlic and ginger; sauté for about 30 seconds until fragrant.
  5. Add shrimp in a single layer; cook for 2-3 minutes undisturbed until pink; flip and cook an additional 1-2 minutes until opaque; remove from the pan.
  6. Stir-fry asparagus and bell pepper for 2-3 minutes until softened; then add snap peas and cook for another 2 minutes.
  7. Return shrimp to the pan; pour the sauce over all ingredients; stir well to combine; cook for an additional 1-2 minutes until sauce thickens.
  8. Serve over rice or noodles, garnishing with sesame seeds or green onions if desired.
