  • 1/2 teaspoon garlic powder

  • 1 lime, juiced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (optional)

Instructions

  1. Pat the scallops dry with paper towels. In a bowl, combine the scallops with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using). Toss gently to coat all sides. Let them marinate for at least 30 minutes or up to 24 hours in the refrigerator to enhance flavor.
  2. Heat a large skillet over medium-high heat. Once hot, add the marinated scallops to the skillet. Sear them for about 2-3 minutes on each side or until they turn golden brown and are cooked through.
