  • 1 sheet puff pastry
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 10 oz cremini mushrooms, sliced
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, grated
  • 1/2 cup Gruyère cheese, grated
  • Fresh herbs (thyme)
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a large skillet over medium heat, combine olive oil and butter. Sauté the diced onion until soft (about 5 minutes), then add minced garlic and sliced mushrooms. Cook until mushrooms are browned (approximately 8 minutes).
  3. Season with thyme, salt, pepper, and optional apple vinegar; cook until liquid evaporates. Stir in cream cheese, Parmesan, and Gruyère until creamy.
  4. Unroll the puff pastry and cut diagonal strips on each side while keeping the center intact for filling.
  5. Fill the center with the mushroom mixture and braid the strips over it. Brush with beaten egg.
  6. Bake for 20–22 minutes until golden brown. Cool slightly before slicing.
