  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • Salt and pepper to taste
  • 1 package of puff pastry (2 sheets, thawed)
  • 1 egg, beaten (for egg wash)

  1. Caramelize the onions by heating olive oil in a skillet over medium heat. Add sliced onions and a pinch of salt. Cook slowly for 15-20 minutes until golden brown.
  2. In a mixing bowl, combine the ground sausage with cooled caramelized onions, fresh thyme, salt, and pepper.
  3. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Roll out the puff pastry on a floured surface and cut into rectangles (4×6 inches). Place a spoonful of filling on each rectangle, fold over, seal edges with a fork, and brush tops with egg wash.
