  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 3 large sweet onions, sliced
  • 4 tbsp unsalted butter
  • 2 cups low-sodium beef broth
  • 2 tsp fresh thyme, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 ½ cups Gruyère cheese, shredded

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a large skillet over medium heat, melt the butter. Add sliced onions and stir occasionally until golden brown. Stir in garlic and thyme until fragrant.
  3. Layer half of the sliced potatoes in the greased baking dish. Spread half of the sautéed onion mixture over the potatoes; repeat with remaining ingredients.
  4. Pour beef broth evenly over all layers, then top with shredded Gruyère cheese.
  5. Cover tightly with aluminum foil and bake for 45 minutes. Remove foil and bake uncovered for an additional 15 minutes until golden brown.
  6. Allow to rest for about 10 minutes before serving.
