  • 2 cups corn kernels
  • 1 tablespoon olive oil
  • 12 oz cooked sausage (chicken or turkey)
  • 1 large red bell pepper, diced
  • 1 large zucchini, sliced
  • ½ teaspoon chili powder
  • Fresh cilantro, chopped

Instructions

  1. Wash all vegetables thoroughly. Dice the red bell pepper and slice the zucchini into rounds.
  2. In a large skillet over medium heat, add olive oil and warm it for about 1 minute.
  3. Add the cooked sausage to the skillet and sauté for about 5 minutes until heated through.
  4. Stir in the diced bell pepper and sliced zucchini. Mix well with the sausage.
  5. Sprinkle in the chili powder and continue cooking for an additional 5–7 minutes until veggies are tender yet crisp.
  6. Fold in the corn kernels and chopped cilantro, cooking for another 2 minutes until everything is heated through.
  7. Remove from heat and serve warm.
