Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 3 medium apples, peeled and diced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • Salted caramel sauce (for drizzling)

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press firmly into the bottom of the pan and bake for about 10 minutes until golden; let cool.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar, then mix in eggs one at a time. Add vanilla extract and sour cream; pour over the cooled crust.
  4. Bake in a water bath for 55-65 minutes until the center is slightly jiggly. Cool in the oven with the door ajar for an hour then chill for at least 4 hours.
  5. Sauté diced apples with butter, brown sugar, cinnamon until soft. Cool before topping cheesecake.
  6. Drizzle with homemade salted caramel before serving.
