  • 1 sprig fresh rosemary
  • 1 tsp olive oil or butter
  • Salt and black pepper to taste
  • 1 cup mashed potatoes (prepared with butter and milk)
  • Fresh spinach
  • 56 cherry tomatoes, halved
  • 1 cucumber, sliced
  • Optional: Olive oil and lemon juice for dressing

Instructions

  1. Season the salmon fillet generously with salt and pepper. In a heated skillet, add olive oil or butter along with the rosemary sprig. Sear the salmon for about 3-4 minutes on each side until golden brown.
  2. Boil water in a pot, add chopped potatoes, and cook until tender. Drain and mash with butter, salt, and warm milk until creamy.
  3. In a bowl, combine spinach, halved cherry tomatoes, and sliced cucumber. Drizzle with olive oil and lemon juice if desired.
  4. To serve, spoon mashed potatoes onto a plate, top with seared salmon garnished with rosemary, and add the fresh garden salad.
