  • 3 lb bone-in lamb shoulder
  • Salt & freshly ground black pepper
  • 1/4 cup honey
  • 3 tbsp soy sauce
  • 4 cloves garlic, minced
  • 8 whole garlic cloves, peeled

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Pat the lamb shoulder dry and season generously with salt and pepper.
  3. In a small bowl, combine honey and soy sauce, then stir in minced garlic.
  4. Place the lamb in a roasting pan, pour half of the glaze over it, and add whole garlic cloves around it.
  5. Roast for about 2 hours or until the internal temperature reaches 145°F (63°C). Baste every 30 minutes with remaining glaze.
  6. Let rest for at least 15 minutes before carving.
