  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 1/2 cups sugar
  • 4 large eggs
  • 3 tablespoons unsweetened cocoa powder
  • 1 cup sour cream
  • 1/2 cup whole buttermilk
  • 2 teaspoons vanilla extract
  • 1 teaspoon white vinegar
  • 2 (1 oz) bottles of red food coloring

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan.
  3. Beat cream cheese and sugar until smooth; add eggs one at a time. Mix in cocoa powder, sour cream, buttermilk, vanilla extract, vinegar, and food coloring until combined.
  4. Pour filling into crust and bake for 10 minutes at 325°F; then lower temperature to 300°F (149°C) and bake for an additional hour and 15 minutes until set.
  5. Let cool before removing from the pan and topping with cream cheese frosting made from beating softened cream cheese, butter, powdered sugar, and vanilla extract.
