  • 2 Tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 1/2 cups whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 3 Tbsp unsalted butter (melted, plus more for pan)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup confectioners' sugar
  • 3 Tbsp maple syrup
  • 1 cup heavy cream

Instructions

  1. In a blender, combine all crepe ingredients (from flour to vanilla) and blend until smooth. Let the mixture rest for at least 30 minutes.
  2. Heat a nonstick skillet over medium heat and lightly grease it with butter. Pour about 1/4 cup of batter into the skillet, swirling to coat evenly. Cook until the edges turn golden brown (about 1-1½ minutes), then flip and cook the other side for another minute. Repeat with remaining batter.
  3. In a mixing bowl, beat cream cheese, confectioners' sugar, maple syrup, and heavy cream until smooth.
  4. Spread filling on each crepe, fold or roll them up, and serve warm.
