Pumpkin Cheesecake Truffles are the perfect bite-sized fall treats, encapsulating the warm flavors of autumn in every creamy, sweet morsel.

Ingredients

  • 1 tablespoon butter
  • 4 ounces cream cheese (softened)
  • 1/2 cup canned pumpkin puree
  • 1 (14-ounce) can sweetened condensed milk
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 cup graham cracker crumbs
  • 1/3 cup white chocolate chips
  • Granulated sugar (for coating)

Instructions

  1. In a skillet over medium heat, melt the butter and combine with cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice. Stir until thickened.
  2. Mix in graham cracker crumbs and white chocolate chips until smooth. Allow to cool slightly.
  3. Spread mixture onto a greased baking sheet and refrigerate for at least 2 hours or overnight until firm.
  4. Once chilled, roll into small balls and coat each truffle with granulated sugar.
  5. Decorate with chocolate chips on top to resemble stems if desired.
