  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 1 medium sweet potato, diced
  • 1 tsp olive oil, for roasting
  • 1 ripe avocado, sliced
  • 2 hard-boiled eggs, halved
  • Optional: fresh parsley or cilantro, for garnish

Instructions

  1. Preheat oven to 400F (200C). Toss diced sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
