  • 1 medium onion, freshly grated
  • 4 medium potatoes, grated and drained well
  • 3 fresh eggs
  • 4 tablespoons all-purpose flour
  • Sea salt and freshly ground black pepper to taste
  • 6 ripe tomatoes, diced (for topping)
  • 150g fresh mozzarella cheese, shredded (for topping)
  • Fresh dill, chopped (for garnish)
  • Olive oil for pan-frying

Instructions

  1. In a mixing bowl, grate the onion and potatoes. Add eggs, salt, pepper, and flour; mix until combined.
  2. Heat olive oil in a non-stick pan over medium heat. Drop spoonfuls of the batter to form pancakes. Cook for about 2 minutes per side until golden.
  3. Meanwhile, mix diced tomatoes with half of the mozzarella and chopped dill in another bowl.
  4. Preheat the oven to 200°C (400°F). Place pancakes on a baking sheet, top with the tomato mixture and remaining mozzarella. Bake for 15 minutes until cheese is melted.
  5. Serve warm with extra dill as desired.
