  • 4 ounces dark chocolate (60–70%), chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/3 cup granulated sugar
  • 1/8 teaspoon salt
  • 2 tablespoons all-purpose flour
  • Cocoa powder for dusting

Instructions

  1. Make the Pistachio Filling: Melt the white chocolate with heavy cream until smooth. Mix in pistachio paste and salt, then spoon into a silicone ice cube tray and freeze for at least an hour.
  2. Preheat the oven to 425°F (220°C). Grease six ramekins with butter and dust with cocoa powder.
  3. Prepare the Chocolate Batter: Melt butter and dark chocolate together until smooth. In another bowl, whisk eggs, egg yolks, sugar, and salt until thick. Combine with melted chocolate and gently fold in flour.
