  • 1 medium pineapple
  • 1 ½ lbs boneless skinless chicken breasts
  • ½ tsp Salt
  • ¼ tsp ground black pepper
  • 1 Tbsp cooking oil (vegetable oil, coconut oil, olive oil etc.)
  • 1 cup pineapple chunks (from the pineapple boats)
  • ¼ cup soy sauce
  • ¼ cup water
  • 3 Tbsp brown sugar
  • 1 tsp ginger powder
  • 3 Tbsp rice vinegar
  • 2 tsp cornstarch
  • 3 garlic cloves (minced)
  • 2 cups cooked rice
  • 1 green onion (chopped)
  • ½ tsp sesame seeds

Instructions

  1. Cut the pineapple in half lengthwise and scoop out the flesh to create two boats. Reserve 1 cup of chunks for later.
  2. In a bowl, season the chicken pieces with salt and pepper.
  3. Heat oil in a large skillet over medium-high heat; cook the chicken for 5-7 minutes until browned.
  4. In a separate bowl, whisk together soy sauce, water, brown sugar, ginger powder, rice vinegar, cornstarch, garlic, and reserved pineapple chunks. Add this mixture to the skillet with cooked chicken.
  5. Stir until well combined and heated through for an additional 2-3 minutes.
  6. Serve the teriyaki chicken in the pineapple boats over cooked rice.
