  • 1/3 cup granulated sugar
  • 1/2 cup smooth peanut butter
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup old-fashioned oats
  • 1 cup chocolate chips (divided)

Instructions

  1. Preheat the oven to 350F (180C). Line cookie sheets with baking paper.
  2. In a large bowl, beat together softened butter, brown sugar, granulated sugar, and peanut butter until creamy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. Gradually incorporate flour, baking powder, baking soda, and salt; mix gently.
  5. Stir in oats by hand until evenly distributed.
  6. Fold in 3/4 cup of chocolate chips; reserve the rest for topping.
  7. Form balls using about 3 tablespoons of dough each; chill if sticky.
  8. Place dough on lined sheets about 2–3 inches apart; bake for 10–12 minutes until just set.
  9. Cool on sheets for at least 10 minutes before enjoying.
