  • 1 cup onion, chopped

  • 3 cans beef broth (14.5 ounces each)
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can tomato sauce (8 ounces)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ditalini pasta
  • 1 can kidney beans (15.5 ounces), rinsed and drained
  • 1 can cannellini beans (15.5 ounces), rinsed and drained

Instructions

  1. Chop the onion, celery, carrots, and mince the garlic.
  2. Rinse and drain the kidney and cannellini beans under cold water.
  3. In a large pot or Dutch oven over medium-high heat, brown the ground beef until fully cooked; drain excess fat if needed.
  4. Add the chopped onion, celery, and carrots; cook for about 5 minutes until softened. Stir in garlic and Italian seasoning; cook for an additional minute.
  5. Pour in beef broth, diced tomatoes, tomato sauce, salt, black pepper, and ditalini pasta; bring to a boil.
  6. Reduce heat to medium-low and simmer for about 7 minutes before adding rinsed beans; continue cooking until pasta is al dente (around another 5–8 minutes).
