  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey
  • 8 oz grape tomatoes
  • 8 oz fresh mozzarella balls
  • 2 garlic cloves, minced
  • 2 Tbsp avocado oil
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 1 Tbsp Dijon mustard

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, minced garlic, salt, pepper, Italian seasoning, and Dijon mustard; set aside.
  3. In a large oven-safe skillet over medium-high heat, add avocado oil. Season chicken with salt and pepper and sear until golden brown on both sides (about 1-2 minutes per side).
  4. Pour the balsamic sauce over the chicken and scrape up any browned bits from the pan.
  5. Top with halved grape tomatoes and mozzarella balls.
