  • 1 large egg yolk
  • 28 ounces sweetened condensed milk
  • 1 teaspoon light corn syrup
  • 6 ounces dark chocolate, coarsely chopped
  • Sea salt for finishing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, cream together softened butter and sugar until fluffy. Add the egg yolk and mix well.
  3. Gradually incorporate flour and salt into the mixture until combined. Press evenly into the bottom of the prepared pan.
  4. Bake for about 20 minutes or until lightly golden; allow to cool slightly.
  5. In a saucepan over medium heat, combine sweetened condensed milk and light corn syrup. Cook while stirring until thickened, about 5-7 minutes. Pour caramel over the cooled shortbread base.
  6. Melt dark chocolate with unsalted butter in a microwave-safe bowl or double boiler until smooth, then pour over the caramel layer.
  7. Sprinkle sea salt on top while still warm and let cool completely before cutting into bars.
