  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper to taste

Instructions

  1. In a mixing bowl, combine mozzarella, feta, spinach, tomatoes, red onion, and black pepper.
  2. Place one tortilla flat on a clean surface and add one-fourth of the filling mixture onto half of it. Fold over to cover the filling.
  3. Heat olive oil in a skillet over medium heat. Cook the folded quesadilla for 3-4 minutes per side until golden brown.
  4. Let cool slightly before slicing into wedges and serve warm.
