  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked couscous
  • 1 cup chopped cucumber
  • 1/2 cup chopped red onion
  • 1/2 cup chopped Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1 cup Greek yogurt
  • 1/4 cup chopped cilantro
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, mix chicken, olive oil, oregano, garlic powder, salt, and pepper until well coated.
  2. Preheat grill or grill pan to medium heat and grill marinated chicken for about 5-7 minutes per side until fully cooked. Allow to rest before slicing.
  3. Combine Greek yogurt, cilantro, lemon juice, garlic, salt, and pepper in a small bowl; mix until smooth.
  4. Assemble bowls by dividing couscous and topping with sliced chicken, cucumber, red onion, olives, and feta cheese. Drizzle with yogurt sauce before serving.
