  • 110 g almond meal/flour
  • 155 g confectioner’s sugar
  • 90 g egg white (3 large egg whites)
  • 55 g granulated sugar
  • ¼ teaspoon cream of tartar
  • ¼ cup freeze-dried mango, finely crushed
  • ½ cup (1 stick) unsalted butter, softened
  • 1½ cups powdered sugar
  • 2 tablespoons coconut milk
  • ¼ teaspoon coconut extract
  • 2 tablespoons freeze-dried mango, finely crushed
  • Few drops yellow food coloring (optional)

Instructions

  1. Line baking sheets with parchment paper.
  2. Pulse almond meal and confectioner's sugar in a food processor; sift several times.
  3. Whip egg whites, cream of tartar, and granulated sugar until stiff peaks form.
  4. Fold dry ingredients into meringue gently until smooth.
  5. Pipe the batter onto prepared sheets; let sit for 30 minutes to 2 hours.
  6. Bake at 300°F for 15-20 minutes until firm.
  7. Prepare mango-coconut buttercream by whipping softened butter and mixing in remaining ingredients.
  8. Assemble macarons by filling shells with buttercream.
