  • 2 3/4 cups (344 g) all purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, softened
  • 1 egg, at room temperature
  • 2 tsp vanilla bean paste
  • 1/2 cup (100 g) granulated white sugar (for frosting)
  • 1/2 tbsp culinary lavender (for frosting)
  • 4 oz (113 g) cream cheese
  • 1/4 cup (56 g) unsalted butter, softened (for frosting)
  • 1 cup (130 g) powdered sugar (for frosting)
  • 1/2 tbsp culinary lavender (for frosting)
  • 1 tsp vanilla bean paste (for frosting)
  • purple food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, sift together flour, baking powder, baking soda, salt, and Earl Grey tea. Set aside.
  3. In a stand mixer, cream softened butter and granulated sugar until light and fluffy. Add egg and vanilla bean paste; mix well.
  4. Gradually add the dry mixture to the wet ingredients until just combined.
  5. Use a cookie scoop to portion dough onto the prepared baking sheet, spacing them apart.
  6. Bake for 9 minutes or until edges are lightly golden. Allow to cool before transferring to wire racks.
  7. For the frosting, beat together cream cheese and softened butter, then add powdered sugar, culinary lavender, and vanilla bean paste until smooth.
  8. Once cooled, frost each cookie generously with lavender cream cheese frosting.
