  • 1 cup granulated sugar
  • ½ cup canola oil
  • ½ cup buttermilk
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1 cup shredded zucchini

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare mini or large loaf pans with cooking spray.
  2. In one bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, beat eggs, then mix in sugar, oil, buttermilk, lemon zest, and lemon juice until well blended.
  4. Gradually combine dry ingredients into the wet mixture without overmixing. Gently fold in shredded zucchini.
  5. Pour the batter into prepared pans and bake for about 35 minutes or until a toothpick inserted comes out clean.
  6. For optional glaze: Mix powdered sugar with lemon juice until smooth and drizzle over cooled loaves.
