Lemon Rice is a vibrant and zesty dish that adds a refreshing twist to your meals. This quick and easy recipe features the bright flavors of fresh lemon juice and zest, making it the perfect side dish for grilled chicken, beef, or fish.

  • 2 cups long-grain white rice (like basmati)
  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • 3 cups water
  • Zest and juice of 1 lemon
  • 1/8 teaspoon turmeric (optional)
  • 1 tablespoon chopped parsley (for garnish)

Instructions

  1. Rinse the rice under cold water in a fine mesh strainer until the water runs clear.
  2. In a medium pot, melt the butter over medium heat. Add the rinsed rice and salt, cooking for about 3 minutes until slightly toasted.
  3. Pour in the water along with lemon zest and juice. Bring to a boil, then lower the heat and cover. Simmer for 15 minutes or until all liquid is absorbed.
  4. Remove from heat and let sit covered for an additional 5-10 minutes to firm up.
  5. Fluff with a fork, sprinkle with turmeric if desired, and garnish with parsley before serving.
