Lemon-Pepper Salmon Quinoa Plate is a vibrant and nutritious dish that combines the zesty flavors of lemon with tender salmon, fluffy quinoa, and an array of colorful vegetables.   • 1 salmon fillet (about 46 oz)
  • 1 tsp lemon juice
  • Salt & black pepper to taste
  • 1/2 cup uncooked quinoa (or 1 cup cooked)
  • 1/2 cup broccoli florets
  • 1/3 cucumber, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp olive oil

Instructions

  1. Rinse quinoa under cold water. Combine with double the amount of water in a pot. Boil, cover, reduce heat, and simmer for about 15 minutes until fluffy.
  2. Steam or boil broccoli for 3-4 minutes until tender-crisp.
  3. Season salmon with salt, pepper, and lemon juice. Heat olive oil in a non-stick pan over medium heat. Sear salmon skin-side down for about 4-5 minutes; flip and cook another 3-4 minutes until flaky.
  4. Assemble the plate by layering cooked quinoa with seared salmon on top and arranging steamed broccoli, cucumber slices, and halved cherry tomatoes around.
