  • 1 cup granulated sugar (divided)
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

  1. Preheat the oven to 350°F (175°C). In a bowl, mix together flour, 1/2 cup sugar, baking powder, melted butter, and salt until crumbly. Reserve 1/2 cup of this mixture.
  2. Press the remaining mixture into an 8×8-inch baking pan lined with parchment paper. Bake for 12-15 minutes until lightly golden.
  3. In another bowl, whisk together eggs, remaining sugar, flour, lemon juice, and zest until smooth. Pour over the baked crust.
